Recently I prepared an enormous group of this rich broccoli apple plate of mixed greens formula and I plan on having it for lunch each day in the current week. The most recent couple of weeks have been somewhat disordered and I need a genuine break for some time. We had a progression of spontaneous home fixes that made a gigantic wreckage just as a monster cost.

Know what my life resembles this week? Destroyed wood floors, cracked dishwasher, flawed clothes washer, and water trickling out of roofs.

Truly… I am prepared to simply discard this house for another one if things don't quit breaking. At that point, the day after we got everything ALMOST fixed we left for a 2-week long excursion to see family up north.

Ingredients :

  • 4 cups fresh broccoli florets (about 2 medium heads)
  • 2 large apples, chopped
  • 1/2 cup shredded carrots
  • 1/2 cup dried cranberries
  • 1/4 cup red onion, chopped
  • 1/2 cup chopped pecans
  • 2 tbsp Lemon juice (about half a lemon)
  • 1/2 cup Mayonnaise,
  • 1/2 cup Greek yogurt
  • 1/8 tsp Pepper
  • 1/4 tsp Salt
  • 1 tbsp Sugar

Instructions :

  1. In a large bowl, place the broccoli, apples, cranberries, pecans, onion and shredded carrot
  2. In a smaller bowl, whisk together the mayonnaise, yogurt, salt, pepper, sugar and lemon juice.
  3. Pour the dressing over the salad ingredients and mix until everything is coated.
